Banana Bread
Since I am starting Whole30 February 1st, I felt the need to indulge, and bake some banana bread to have for the rest of this upcoming week. I had several ripe bananas, and thought why not share this simple recipe with you all.
There are many different ways to make banana bread. Some, healthier than others. I usually like to get really creative by baking a gluten free or vegan version, but today's recipe is pretty forward. Sometimes you have to work with whatever you have in hand.

This banana bread is one of my favorite recipes. It is simple to make, and chances are you have all the basic ingredients to make it at home.
This recipe does not require a mixer. You can mix everything in one bowl, vary the amount of honey, and get really creative with various toppings.
Some of the toppings that I like to add are combinations of

- Chopped almonds & ground cinnamon.
- Belgian cocoa powder.
- Fresh Bluberries & vanilla extract.

The base of this recipe is not too sweet! It is moist and delicious, even if you decide not to add extra toppings.

Makes 1 loaf

INGREDIENTS:

2 to 3 very ripe bananas

1/3 cup melted coconut oil

1 teaspoon baking powder
-
Pinch of salt
-
1/3 cup honey
-
1 large egg, beaten
-
1 teaspoon vanilla extract
-
1 1/2 cups of all-purpose flour
Instructions:

1. Preheat the oven to 350°F , grease a 4x8-inch loaf pan with coconut oil.
2. In a mixing bowl, mash the ripe bananas with a fork until completely smooth. Stir the melted coconut oil into the mashed bananas.
3. Mix in the baking powder and salt. Stir in the honey, beaten egg, and vanilla extract. (add toppings of preference at this point) Mix in the flour.
4. Pour the batter into your prepared loaf pan. Bake for 50 minutes to 1 hour at 350°F or until a tester inserted into the center comes out clean.
5. Remove from oven and let cool in the pan for a few minutes. Then remove the banana bread from the pan and let cool completely before serving. Slice and serve.
** After pouring batter in the pan, and before putting in the over, top with extra toppings for presentation.
