15 Minute Tomato soup

This recipe is for those times when I feel like having a good meal, and I don’t desire to spend hours in the kitchen. It is so incredibly easy to make, it only takes 15 minutes from start to finish.

This is one of my most request recipes by my friends and family. For this recipe you are only going to need big Roma tomatoes, garlic, paprika, tumeric, avocado oil , and salt. I also like to add 3 or 4 tablespoons of almond milk for creaminess, this is really a choice of preference. 

A good blender is such a great investment, if you like soups and smoothies! It makes a huge difference. This is the one I use:

The resulting soup is fresh, aromatic, and healthy. I like to cook with the intended of always maintaining a healthy heart and brain. This soup is not an exception. 

Tomatoes are great source of Lycopene which is powerful antioxidant that can improve heart health. 

Lycopene can also regulate brain growth which makes this soup an amazing addition for in your kids diets. Tomatoes are known to protect against Prostate Cancer, and Asthma. They are also full of vitamins and minerals that help us ensure our bones, hair, skin, and teeth stay healthy.

There really is no excuse not to eat a healthy meal when you can whip up something like this in such a short space of time, and obtain all those health benefits.

In just 15 minutes and a few simple steps you could be serving a bowl of this fresh and delicious Tomato Soup. It’s so quick and simple, and can be super cheap to make too, when tomatoes are in season.

Healthy and simple recipes 

Ingredients:

Serves two and can easily be doubled ​

  • 6 Roma tomatoes chopped in big chunks

  • Two tablespoons avocado oil

  • 3 garlic cloves

  • 1 tablespoon papikra

  • 1 tablespoon tumeric

  • 1 1/2 teaspoon salt

  • 4 tablespoons almond milk (optional 

Instructions:

 

  • Heat a pan over a medium heat and add the Avocado oil. 

  • When hot add the garlic and cook for a couple of minutes until just starting to turn golden.

  • Add the chopped tomatoes.

  • Add paprika, tumeric and salt. Continue to cook over a medium heat, stirring every few minutes until the tomatoes have broken down and are soft.

  • Remove from. Add almond milk (optional) Then, blitz in a blender or with a stick immersion blender until smooth. 

  • Serve immediately.

Pair this soup with a fresh piece of toast, a garden salad or grilled piece of chicken.

Storage: Leftovers will keep int he fridge for 4 to 5 days and reheat really well in a pan.
