Whole30 cauliflower fried rice 

Cauliflower fried Rice is healthy and clean! Made with cauliflower, coconut oil, carrots, onions, garlic, nutrional yeast, coconut aminos and eggs.

Second post of the year, can you really believe that 16 days have gone by already? Yeah , time is flying by! I haven been seeing a lot of people following whole 30 which inspired me to create this cauliflower fried rice recipe

The Whole30 is not a permanent diet; it’s just 30 days of eating whole foods and exploring a more purposeful, mindful approach to food. 

I followed Whole30 last year. I was able to see and feel major changes. I lost a couple of pounds, got rid of brain fog, and lost my morning congestion (which was a big deal for me.) I plan to Whole30 all throughout next month accompanied by a young lady who is determinate to change her eating habits. I will be sharing a Whole30 shopping list, simple recipes, besides some of the life changing benefits you can achieve in just 30 days.

Following Whole30 can be quite challenging at the beginning. A lot of everyday condiments and prepackage foods have added sugar or additives such as ; Artificial food coloring, High-Fructose Corn Syrup, Sodium Benzoate, and you might not be aware of those. So, the most important thing to remember when doing Whole30 is to check the label on everything you buy.

The two items shown in the pictured are COCONUT ANIMOS and NUTRITIONAL YEAST. Unfortunately, all forms of soy are out for your Whole30. Taking into account any good stir-fry is made with soy sauce, I looked for a Whole30 approved substitute, and I found Coconut Animos: aside from being gluten free, coconut aminos are packed with minerals, vitamin C, and B vitamins. Needless to say, this is a healthier choice, and in my opinion it adds a more delicate taste to this dish. 

The second item is Nutritional Yeast, yellow in color and with a nutty cheesy flavor. Nutritional yeast is an inactive yeast that is a favorite during Whole30 because of its unique flavor and similarity to cheese when added to foods. I mostly use it to add extra flavor to my soups, casseroles, or in this case a generous spoonful for a ​stir fry Nutritional yeast is also the only reliable food source of vitamin B12, so if you're vegan, it's a good idea to add some to your food regularly.

As I mentioned earlier, this cauliflower stir-fry has a strong, but delicate coconut taste. This recipe makes a great addition to a weekly meal preparation, or a fancy dinner for friends and family. 

Enjoy adding in your favorite protein and veg. Possible add-ins: baby corn, broccoli, cabbage, water chestnuts, tofu, shrimp or just some scrambled eggs. ;^)

Prep time: 5 minutes

Time: 15 minutes

Total Time: 20 minutes

Servings: 4 servings

Ingredients:

16 oz cauliflower rice

2 tablespoon coconut oil

2 shredded carrots 

1/2 cup diced red onions

5 cloves (minced)

1/3 cup coconut animos 

1 tablespoon apple cider

1/2 tablespoon diced ginger

salt pepper to taste

Instructions:

1. In a large pan, sauté carrots and onions in coconut oil  on a medium/high heat, until onions become soft and translucent. (about 2-3 minutes)

2. Next add in garlic, and cook for 2 minutes. 

3. Next stir in cauliflower, and cook for 8 minutes. Making sure the carrots, onions, and garlic are well incorporated.

4. Add coconut aminos, apple cider, salt pepper, and diced ginger.  Cook for 2 minutes. 

5. Lastly add your protein of choice. In this case I scrambled 3 eggs , and added them at the end.
